Ingredients
6 large carrots
6 broccoli florets
½ head white cabbage
1 cup Mighty Sesame Co. Organic Tahini
½ cup banana peppers or pepperoncinis
½ cup apple cider vinegar
2 tbsp. maple syrup
1 tbsp. black sesame seeds
1 tbsp. Dijon mustard
3-6 mint leaves or to taste
Salt & pepper to taste
Directions
- Finely shred or julienne the cabbage, broccoli florets, and carrots, and add them to a mixing bowl.
- In the same bowl, add the apple cider vinegar, maple syrup, sliced banana peppers or pepperoncinis, Dijon mustard, and black sesame seeds.
- Complete the tahini coleslaw dressing by drizzling Mighty Sesame Co. Organic Tahini and tossing thoroughly until the vegetables are evenly coated.
- For the best taste, cover and let the coleslaw rest in the refrigerator for at least 1 hour. This allows the flavors to meld and the vegetables to soften slightly.
- Serve chilled. Enjoy it on its own as a refreshing side, or pair it with grilled meats, sandwiches, or wraps for extra flavor.
