Marinade
½ t Ground Cumin
¼ t Coriander
¼ Paprika
1/8 Cayenne Pepper
4T Olive Oil
1 ½ Kosher salt
¾ t ground pepper
1 ½ lb chicken Thighs
Tahini Yogurt Sauce
1 cup Plain yogurt
2 T Tahini
¼ t chopped garlic
¼ t grated lemon zest
4 T lemon juice
2T Chopped Dill
2 T Chopped Mint
½ Cucumber ¼ half moons de-seeded
2 C Shredded Romaine Lettuce
¾ Cup Cherry or grape tomatoes
1/3 cup thinly sliced red onion
Directions
- Mix all marinade ingredients and marinate Chicken Thighs until ready to cook.
- Mix yogurt, tahini, chopped garlic, lemon zest, lemon jc, chopped dill, mint.
- Once chicken is fully cooked (we recommend BBQ’ing) slice into ½ inch slices. Put into pita.
- Mix with Tahini Yogurt Sauce.
- Top with Lettuce Tomato Onions and cucumbers.
