Ingredients
1 eggplant, sliced long ways in ½ inch slices
Olive oil, enough to drizzle over each slice of eggplant
Kosher salt, a few pinches for each slice
1 tsp. Black pepper
2 tsp Garlic Powder
2 T. Everything Bagel Seasoning
4 cloves Garlic
1 tsp Cumin
2 tsp. Paprika
2 T. Honey or maple syrup
Mighty Sesame Squeeze Tahini, drizzle
Directions
- Preheat oven to 375°.
- Cut eggplant length wise into four even sections.
- Place eggplant slices on tin foil covered baking sheet.
- Drizzle Olive oil over the eggplant.
- Sprinkle: Kosher Salt, Black pepper, garlic powder and everything bagel seasoning on top of the eggplant.
- Bake eggplant for 40 mins.
- Next, take out eggplant and top with: Garlic, cumin, paprika and honey/maple syrup.
- Place Eggplant back in the oven for 20 mins or until soft.
- Drizzle Mighty Sesame Tahini on top.
