Ingredients
2-15oz cans chickpeas, drained
2 cucumbers seeded & cut into med. dice
1/2 cup of mint and parsley (roughly chopped)
1/4 Mighty Sesame tahini
2 lemons for juice
1 tbsp. olive oil
Water as needed to thin dressing
Directions
- Mix chickpeas, cucumber, and herbs in a bowl. Mix tahini, lemon juice, and olive oil together in a separate bowl. Add water if needed to thin out the dressing if needed.
- Pour dressing over the salad and toss until all ingredients are mixed together. Add salt and pepper to taste.
