2 English cucumbers, cut lengthwise then crosswise into ½ inch
1 cup edamame
1 small orange bell pepper, sliced very thinly
2 T miso paste
¼ cup tahini
1 T lemon juice
1 T hot water
½ cup red onion, sliced thinly
1 T sesame seeds, toasted
1 T olive oil
2 shots of your favorite hot sauce
Salt and pepper
- In a bowl, mix together miso paste, tahini, hot water and lemon juice.
- In separate bowl, mix together cucumber, onion, edamame and bell pepper. Drizzle with olive oil and season with salt and pepper.
- Add dressing mixture and mix well. Check seasoning.
- Place on serving platter and sprinkle with sesame seeds.
