Mediterranean Cauliflower with Harissa Tahini Dipping Sauce



1 medium head Cauliflower
2T. Olive Oil
½ C Harissa Tahini
½ Bunch Fresh Dill
½ Bunch Fresh Mint
1 T Fresh Garlic
1 Tsp Sm. Paprika
½ Tsp. Coriander
½ Tsp. Kosher Salt
½ Tsp. Pepper
1 squeezed Lemon Juice


  1. Preheat oven to 350 degrees.
  2. In large bowl combine cauliflower florets, olive oil and kosher salt.
  3. Toss to cover all cauliflower then spread out on sheet pan and cook for 20-25 minutes. Towards the end of the cooking time you may want to use the broiler in the oven to brown some of the cauliflower for flavor and plate presentation.
  4. Combine all other ingredients in a bowl and whisk until mixed. Add water if dressing is too thick, add more Tahini if dressing is too thin.
  5. In large bowl mix dressing with cauliflower.
  6. Garnish with fresh Dill and Mint
